Moong Daal Special Khasta Kachori Recipe

INGREDIENTS FOR STUFFING :
1/2 Cup Yellow Moong Dal
1 Tbsp Coriander Powder
2 Tbsp Armchuran Powder
2 Tbsp Red Chili Powder
1/2 tbsp Cumin powder
1 Tbsp Garam Masala
1/4 Tbsp Sugar
1 1/2 Tbsp Oil
1 Tsp Turmeric powder
1 Tsp Ajwain
Salt ( According To Taste )
INGREDIENTS FOR DOUGH:
2/3 cup water
3 Tbsp Ghee
1 Cup All purpose Flour
1 Cup wheat Flour
Oil for Fry
Salt ( According To Taste )
Method for Stuffing :
- Take Moong Dal in a Pan and medium Heat and dry Roast it by giving its a stir constantly till the Color Changes slightly. it will take 9 to 10 Minutes.
- Remove moong Dal in Plate and let it cool completely.
- Now Dal is Cooled then Crush the Dal Powder with Grinder or Blander.
- Now, Add all the Spices like red chili, Coriander Powder, Cumin Powder, Amchur, Garam masala, Ajwain, Salt, sugar and mix it Well.
- After Mixing Spices, Add 1 1/2 Table Spoon Oil.
- Mix It Well, then Keep it aside.
Method for Dough :
- Take Medium Bowl and Add All Purpose Flour and Wheat Flour and Mix it Well.
- Now add Ghee and Some water and Mix it again. and make tight and stiff yet Smooth Dough.
- Cover it with Plate or Dry Cloths and rest for 15 Minutes.

How To Make Khasta Kachori :
- After All the Steps knead the Dough one More time and Make it Smooth.
- Now Divide in to 15 Equal portions. Roll it in to smooth ball shape and flatten between your palm.
- Roll it in to 2 to 2.5 inch diameter circle.
- Place Couple of teaspoon of stuffing mixture in the Center.
- Gather the edges and pinch it.
- Now Press it by Your hand gently and it should be sealed properly.
- Now Using the rolling pin and roll it in to 2 to 3 Diameter Kachori.
- Keep the rolled Kachori on the plate and Cover it wuth Dry Cloth.
- Now Heat the Oil in to Medium Heat.
- Once hot slide the Kachori in to Hot oil. Slightly and gently press into Circular motion using spatula.
- Fry till the Kachori's Bottom turn Golden Brown Color. then Flip it again and fry other side till Crispy and golden brown.
- Once fried from both sides, remove it using spatula and put them in to Paper Towel lined plate.
- Now Your Moong Dal Kachori is Ready To serve.
Tips : Always Fry Kachori on Medium-Low heat For Making Crispy.
